Grilled Cape Hake & Vegetables
This recipe is an easy and delicious balanced meal with Cape Hake, which is a natural source of protein, and a rainbow of colorful vegetables, including pepper, onion, zucchini, asparagus, and mushrooms.
Instructions:
- Slice the zucchini, julienne cut the bell pepper and onion, quarter the mushrooms, and cut the stems off the asparagus
- Drizzle the zucchini, pepper, onion, and mushrooms with olive oil
- Drizzle the asparagus with soy sauce and sesame oil
- Place all the prepared vegetables on a hot griddle, cook on both sides until softened
- Season the Cape Hake fillets with salt and pepper on both sides, cook on a hot griddle for about 2 minutes on each side or until golden and an internal temperature of 145°F is reached

- 4 Cape Hake fillets
- 1 zucchini
- 1 red bell pepper
- 1 red onion
- 1 1/2 cups mushrooms
- 1 1/2 cups green asparagus
- 2 tablespoons soy sauce
- Sesame oil
- Olive Oil
