Roasted Argentine Red Shrimp in Lettuce Cups
Our Argentine Red Shrimp are nestled in lettuce cups and topped with creamy slaw for a refreshing, light, and tasty dish.
Instructions:
- Toss the shrimp lightly with oil and season with salt and pepper
- Place the shrimp on baking sheet lined with parchment paper and bake at 400°F for 10-12 minutes or until shrimp reach an internal temperature of 145°F
- Chop the cabbage and almonds, thin-cut the scallion, and julienne cut the red bell pepper
- Grate the carrot
- Mix the chopped cabbage, chopped pepper, chopped scallion, grated carrot, mayo, vinegar, salt and pepper in a bowl
- Place baked shrimp into butter lettuce leaves, top with slaw mixture, and garnish with chopped almonds

- 1 butter lettuce
- 1 cup cabbage, shredded
- 3 tbsp mayo
- 1 tbsp champagne vinegar
- 1/4 cup red pepper, julienne cute
- 1/4 cup carrot, shredded
- 3 tbsp scallion, thin-cut
- 2 tbsp almonds, chopped
- 1 tbsp neutral oil
