Salmon Poke Bowl
This refreshingly light poke bowl is loaded with flavor and bright colors! This makes an excellent summer dish or an easy lunch.
Instructions:
- Mix the soy sauce, vinegar, sesame oil, and sugar in a bowl
- Cut the salmon into cubes and add into the bowl to marinate for about 20 minutes, then drain
- Add two cups water and quinoa to a pot, bring to a boil, cover and reduce heat to low, simmer for 15 minutes or until quinoa has absorbed water
- Thinly slice the cucumber, carrot, cabbage, and avocado
- Combine the mayonnaise and wasabi in a bowl
- Add the cooked quinoa to a bowl, drizzle with olive oil, top with drained, marinated salmon pieces and sliced vegetable
- Garnish with sesame seeds and wasabi mayo dressing

- 1 lb Salmon
- 1 tsp sugar
- 1 tbsp vinegar
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 cup quinoa
- 2 avocado
- 1 cucumber
- ¼ red cabbage
- 1 carrot
- sesame seeds
- 1 1/2 tablespoon mayonnaise
- 2 teaspoon wasabi
