Shrimp Spring Rolls
This is a perfect appetizer for game days, parties, or just because! These rolls are loaded with delicious ginger and soy sauce flavor and filled with a mixture of shrimp, cabbage, carrot and pepper.
- Chop 12 shrimp, season with salt and pepper, and lightly saute chopped shrimp and whole shrimp in oil until fully cooked
- Remove whole shrimp from the pan
- Boil the cabbage leaves in salted water until tender
- Grate the ginger
- Finely chop the leek, pepper, carrots and cooked cabbage leaves
- Add the chopped vegetables to the pan with the shrimp, season with grated ginger, sugar and soy sauce
- Soak rice wafer paper in water, and place on a damp cloth
- Add a cooked whole shrimp in the center of the rice paper, top with a scoop of the cooked mixture, and wrap the rice paper
- Plate with a side of sweet and sour sauce

- 2 small cabbages
- 2 carrots
- 1 green pepper
- 1 leek
- fresh ginger
- Salt and pepper
- Soy sauce
- Sugar
